Easy Chocolate Weetbix Slice

This Easy Chocolate Weetbix Slice recipe is a Kiwi Classic. It’s so easy that my daughter (10) made it independently. It’s a perfect treat for those lovely kids who worked so hard on their home learning, and for the awesome parents out there who keep sane during the lockdown. You’re not alone!

Weetbix is a Kiwi choice for a breakfast cereal as a part of a healthy balanced diet. It’s a great source of healthy wholegrains and is low in sugar. It provides vitamins and minerals for a great start of your busy day! And this slice recipe incorporates the healthy wholegrain cereal, Weetbix.

Easy Chocolate Weetbix Slice Recipe



185 grams butter

1 cup white sugar

2 tablespoon cocoa powder

3 Weetbix, crushed

1 cup all purpose flour

1 cup desiccated coconut

1 teaspoon baking powder  


2 cups icing sugar

3 tablespoon cocoa powder

50 grams butter, softened

2-3 tablespoons boiling water

How to Make Easy Chocolate Weetbix Slice?


1. Preheat oven to 180 degrees C.  

2. In a large saucepan, melt butter, sugar and cocoa over low heat.  

3. Take the saucepan off the heat, then add crushed Weetbix, flour, desiccated coconut and baking powder. Mix together.  

4. Pour the mixture into a lined tray and press down firmly. Bake for 20 mins.  

5. MAKE ICING: In a large bowl, mix icing sugar, cocoa powder and butter together. Add 1 tablespoon boiling water, or as needed to loosen mixture. Whisk out any lumps.  

6. Ice the slice while it is still warm, then cut up once cooled or when icing has set.

  • The combination of Weetbix and desiccated coconut gives its great texture.
  • Alternatively, you can use cornflakes if you don’t have Weetbix on hand.
  • Make sure to firmly press the mixture on the tray to prevent breakage.
  • Add more boiling water as needed on your icing mixture.
  • Whisk any lumps on your icing mixture.
  • This Easy Chocolate Weetbix Slice is perfect with a glass of milk.

Easy Butter Chicken

This Easy Butter Chicken recipe is for beginners who are not confident in making their own Butter Chicken sauce, or for those people who want a quick fix of their creamy Indian cuisine.

In our family, we do have a thing called “Butter Chicken Thursday!” which means we buy Butter Chicken, Naan, and Samosas from our local Indian Takeaway. We love it as it tastes authentic, and we crave for it most of the time. We don’t do it every Thursday anymore, but from time to time, yes we do!

Easy Butter Chicken Recipe


50 grams butter, or more medium onion, minced

500 grams chicken breast, cut in small cubes

2 cans reduced cream

2 pack of Butter Chicken paste, or sauce

salt and pepper to taste

1-2 tablespoons fish sauce, optional

How to Make Easy Butter Chicken?


1. Heat a skillet or pan, melt the butter and add the onion.  

2. Add chicken and cook until it changes color, about 10 minutes.  

3. Pour 2 cans of reduced cream and mix well. Add in the Butter Chicken paste or sauce. Mix until well combined.  

4. At this stage, you can add salt and pepper to taste. Pour fish sauce to add more flavour.  

5. Simmer for 5-8 minutes or until the sauce is thick and creamy.  

Serve and enjoy this Easy Butter Chicken with your family and friends!


  • You can add more butter if you prefer.
  • Omit the fish sauce, if you don’t like the fishy taste.
  • Cut the chicken however you want, I just preferred it in small cubes (it’s easy to eat).
  •   You can use any store-bought Butter Chicken paste or sauce.
  • Serve with Naan or rice, or both.

Quick and Easy Easter Carrot Patch Brownie

Isn’t this Quick and Easy Carrot Patch Brownie so cute? It’s so easy to make and so fun to decorate. I’m pretty sure this will be in every home at Easter time.

Back in 2017, my daughter made this adorable brownie for Easter that we originally saw from Delish, but made our brownie from scratch. We also made carrots from fondant, as we don’t have strawberries at hand during those times. You can watch my daughter’s video here:  Quick and Easy Easter Carrot Patch Brownie.

Quick and Easy Easter Carrot Patch Brownie Recipe



2 cups sugar

1 cup vegetable oil

4 eggs

2 teaspoon vanilla

1 cup flour

2/3 cups cocoa powder

1/2 teaspoon baking powder

1/2 teaspoon salt  


100 grams dark chocolate

50 grams heavy cream  


Carrot Fondant (or strawberries dip in orange chocolate melt)

Oreo Cookies Chocolate Eggs  

How to Make Quick and Easy Easter Carrot Patch Brownie?


1. Preheat oven to 160 degrees C.  

2. Mix oil and sugar until well blended.  

3. Add eggs and vanilla, stir well.  

4. In a separate bowl, mix all the dry ingredients.  

5. Add the dry ingredients to the oil and sugar mixture. Mix them together.  

6. Pour into greased square or rectangle pan.  

7. Bake for 20-25 minutes until well baked or undercook if you want it gooey.  

8. Cool completely before cutting into squares.  

9. MAKE GLAZE: Simple put dark chocolate and heavy cream in a bowl and put it in the microwave for 1 minute and then mix. Repeat this step until melted.  

10. Spread the ganache on top of the brownies until covered.  

11. Smash Oreo cookies with rolling pin or whizz it in a food processor. Sprinkle it on top of the brownies.  

12. Mold fondant into carrot or you could use strawberries dipped in orange chocolate melt.  

13. Decorate brownies with carrots and eggs.

  • You can use strawberries and blueberries to decorate your Easter brownies as shown on the image above.
  • If you want a chewy brownie, you can replace vegetable oil to butter.
  • Using brown sugar helps create a good texture on the brownie, you are welcome to do half and half. Instead of using 2 cups of white sugar, you can use 1 cup of white sugar and 1 cup of brown sugar.
  • Grease the pan and line it with greased parchment (baking) paper will help the brownie rise evenly.
  • Brownies are meant to be crispy in the outside and soft and fudgy in the inside, but if the middle is too soft, there would be a problem in cooking times or temperature. Baking it more than what the recipe says or making adjustments in the oven temperature may do the trick.



Quick and Easy Left Over Pasta


2 Tbsp olive oil
3 cloves garlic, minced
1 medium onion, minced
2 tomatoes, diced
2 sausages (I used leftovers), sliced thinly
baby spinach
250 gm spaghetti, cooked as per package instructions

salt and pepper to taste


1. Heat olive oil in a pan, add onions. Saute until transparent. Add garlic and saute for until fragrant.

2. Add tomatoes. Saute until its soggy.

3. Saute the sausages and add cooked spaghetti. Mix together.

4. Add baby spinach until its wilted, sprinkle with salt and pepper to taste.

5. Serve and enjoy with family and friends!


Easy Soft and Moist Banana Bread


½ cup white sugar
½-3/4 cup brown sugar (I used ½ cup)
8 tablespoons butter, softened (1 stick or 113 grams)
2 eggs, beaten
3 large extra ripe bananas (1½ cups mashed)
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1½ teaspoon cinnamon
1½ teaspoons vanilla extract
½ cup buttermilk


1. Preheat oven to 325 F or 160 C.
2. Grease a loaf pan.
3. In a large bowl, cream together the butter and sugars.
4. Beat in the eggs until combined.
5. In a medium size bowl, mash bananas. Fold in the bananas with the butter and sugar mixture.
6. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt. Set aside.
7. Add the dry mixture into the wet mixture. Add vanilla extract and buttermilk.
8. Stir gently just until the flour is incorporated. Careful not to over stir.
9. Pour the batter into the prepared loaf pan.
10. Bake on center rack for 1 hour. Cooking times may vary. Check on bread at the 30 minute mark.
11. Insert toothpick into the center. It should come out clean and bread should be golden on the outside.
12. Let cool for 10 minutes. Remove the bread from the pan and place on a cooling rack.

One Pot Taco Pasta


It’s a busy day for me today and so I thought of making One Pot Taco Pasta, an easy dinner meal for the whole family.  I’m baking cakes for a lovely customer who believes in my ability and skills. She had ordered 4 cakes in total 3 years ago and now that her son’s turning 21, she asked me if I could make a car cake for her first born. I saw the photos that she wants me to replicate, I thought for a minute… no, actually for several minutes before I said “yes”. It took me a while because this is going to be my very first 3D car cake and I’m a bit nervous yet excited to make it. I started doubting myself if I could really make exactly like in the photos… My husband and I brainstormed for a while and contemplated before I finally said “yes” to her.

So, this is it… This is the week that she’ll need the cake for her son. I’m preparing it as early as now as I don’t want to stress myself out in making this cake. One way to give myself some time to think about baking – my very small source of income… is to prepare slow-cooker meals or one-pot meals for my family.

I came across this One Pot Taco Pasta recipe video from Tasty. I thought it’s a good recipe to try. It turned out well and indeed very easy to make as you just need to put all the ingredients in one pot, wait for it to cook and voila!!! You have a yummy and very filling dinner… I made some adjustments to the original recipe as some of you know me… I don’t really follow recipes as is… I make adjustments to my own taste and liking. Like in this recipe, I added 1 medium onion and I reckon it needs a bit of sugar and so I added some. It’s optional.

Without further ado… Here is the recipe for One Pot Taco Pasta.


1 medium onion
1 lb ground beef
1 package taco seasoning
2 cups water
1 (15 oz) can diced tomatoes
1 (15 oz) can tomato sauce
1 (15 oz) can whole kernel corn
2 cups uncooked elbow macaroni
Sugar (optional)
Colby grated cheese


1. Saute onions and beef in a large quart pot over medium/ high heat.
2. Add taco seasoning, water, tomatoes, tomato sauce and corn. Bring to a boil
3. Add uncooked macaroni and reduce heat to low. Cover and simmer for 10-15 minutes (until pasta is cooked through). Stir occasionally.
4. Remove from heat. Sprinkle cheese on top and cover.
5. Wait for the cheese to melt.
6. Serve and enjoy this One Pot Taco Pasta with your family and friends!


Easy Baked Donuts


Yay! My Donut Silicone Mould came today and I’m so ecstatic to make Easy Baked Donuts with my little boy K3! I’ve ordered these Donut Silicone Moulds online and it took me a few weeks to receive it. It’s all good! I think the wait is worth it as it’s just a few bucks for these babies.

I’ve searched Google for Easy Baked Donuts as soon as I received these Donut Silicone Moulds. I found the Easy Baked Donuts recipe on YouTube by BakeLikeAPro. The recipe didn’t fail me as it’s really easy to make and healthier than fried donuts but it’s not something I would make again. I was not satisfied on its taste. To be honest, it doesn’t taste like donuts or even close to cake donuts although it turned out looking really good as I make galaxy donuts.

I posted it on my personal Facebook account and I guess they’re enticed by how they look. They didn’t know that the recipe is actually a failure. I will try making donuts again and practise on piping the donuts more evenly into the Donut Silicone Moulds, but next time it will be a different recipe.

I’m happy with my Donut Silicone Moulds that it worked very well in making the easy baked donuts.

Here is the recipe of the Easy Baked Donuts:


1 egg
6 tablespoon white sugar
1 tablespoon melted butter
6 tablespoon milk
1/4 teaspoon salt
1 tablespoon baking powder
1 cup flour


1. Beat the egg in a bowl.
2. Add the sugar and beat until well blended.
3. Now add the melted butter, milk and salt. Mix.
4. Slowly add sifted baking powder and flour to the mixture. Mix all the ingredients until combined.
5. Transfer the batter into a piping bag with a round tip.
6. Pipe the batter around the donut moulds.
7. Bake for preheated oven of 220 degree C for 7-9 minutes, depending on you oven.
8. Cool completely and ice whatever you prefer.

Easy Cupcake Recipe


2 1/4 cups all purpose flour
1 1/3 cups sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup shortening
1 cup milk
1 teaspoon vanilla
2 large eggs


1. Preheat oven to 350 degrees.
2. Line cupcake pans with paper liners.
3. Combine flour, sugar, baking powder, and salt in a large mixing bowl.
4. Add shortening, milk, and vanilla.
5. Beat for 1 minute on medium speed.
6. Scrape side of bowl with a spatula.
7. Add eggs then beat for 1 minute on medium speed.
8. Scrape bowl again. Beat on high speed for 1 minute and 30 seconds or until well mixed.
9. Spoon cupcake batter into paper liners until 1/2 to 2/3 full.
10. Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean.
11. Cool 5 minutes in pans then remove and place on wire racks to cool completely.
12. Frost with your favorite frosting recipe or decorate as you desire.


Microwave: Very Easy Pichi Pichi


1 1/2 cups grated cassava
1 cup sugar
food coloring
1/2 tsp lye water or lihiya
1 bundle pandan leaves (boiled in 2 cups water, reduced to one cup then cooled), or canned pandan concentrate, or a few drops of pandan essence in a cup of warm water
grated coconuts for topping


1. Mix the sugar and pandan flavored water until sugar is dissolved. Put in the cassava. Add lye water, drop by drop while mixing. Add the food coloring.
2. Pour in the mixture to a microwaveable bowl. Microwave for 20 minutes (check every 5 minutes and stir).
3. Scoop the mixture out using a spoon. Make a ball then coat it with grated coconut. Voila! A very easy to cook Pichi Pichi 


Microwaved Scrambled Eggs

2 Eggs
2 Tablespoons of Trim milk
black pepper

1. Beat 2 eggs with 2 tablespoons low-fat milk in a microwave-safe coffee cup or bowl.
2. Beat well so yolks and white are well mixed. Cover with plastic wrap (leave a small gap as a steam vent).
3. Microwave on medium – high for 45 seconds, stir and cook for another 45 – 75 seconds, stirring several times during cooking. (Note: Cooking time will vary dependent on your microwave wattage).
4. Cover and let stand for 30 seconds to 1 minute before serving. The eggs will look slightly moist, but will finish cooking upon standing.
