Semi Naked Sunset Lemon Cake

1⁄2 lb or 227 gm unsalted butter, room temperature
2 1⁄2 cups granulated sugar, divided
4 large eggs, room temperature
1⁄3 cup lemon, zest of, grated
3 cups flour
1⁄2 teaspoon baking powder
1⁄2 teaspoon baking soda
1 teaspoon kosher salt
3⁄4 cup fresh lemon juice
3⁄4 cup buttermilk, room temperature
1 teaspoon vanilla extract


1. Preheat oven to 350F or 180C.

2. Grease 2 8-inch round pans, lining the bottom with parchment paper.

3. Using paddle attachment, cream butter and sugar in a bowl of electric mixer until light and fluffy, approximately 5 minutes.

4. Turn the mixer to medium, add eggs one at a time, following the lemon zest.

5. Sift together flour, baking powder, baking soda and salt into a bowl.

6. In another bowl, combine lemon juice, buttermilk and vanilla.

7. Alternately, add flour and buttermilk mixtures to batter, beginning and ending with flour mixture.

8. Divide batter evenly between pans, smoothing the tops.

9. Bake for 45 minutes- 1 hour, until tester comes out clean.

10. When cakes are done, cool for 10 minutes on a wire rack.


1 1/2 cup or 3 sticks or 342 gms Unsalted Butter (room temperature)
100 g Vegetable Shortening
200 g Cream Cheese (softened)
1 1/2 tsp Lemon Essence or Fresh Lemon Juice
500 g Confectioners or Icing Sugar


1. Put cream cheese, shortening and butter to a mixing bowl and mix at high speed for 5 minutes.

2. Add the lemon essence or lemon juice and reduce speed to low. Add icing sugar gradually, about 1/2 cup at a time.

3. Once you have added all the sugar, mix it at high speed for 7-10 minutes until a smooth velvety frosting forms.


A thin slice of lemon slit in center
Freshly grated peel from one large lemon, if desired.


1. Apply a dab of icing on an 8 inch cake board and place the first torted cake layer (this will secure the cake to the board). Spread a thin layer of frosting on this layer.

2. Place the second cake layer. Spread a thin layer of frosting on this layer and repeat this instruction until the final layer of cake has put in place.

3. Apply desired food gel coloring to the frosting. I used ombre of yellow. It’s up to you.

4. Using star tip, pipe frosting on the top of the cake and sliced lemon alternately. Pipe some frosting design around the bottom of the cake.

Geode Amethyst Birthday Cake

I can’t believe my second daughter is already 8 years old. Where did the time go? Please tell me as she was just my baby girl years past but now she’s turning into a little pretty lady.

This year, she asked me not to have a birthday party with her friends. She told me that she already had awesome birthday parties and so this year she just wants to have a day out with family and to have a simple family dinner.

To be honest, our plan didn’t happen. We were supposed to spend a day in Crystal Mountain because K2 wants crystals, gems and rocks (all my children are). We didn’t go as Dad needs to have a good sleep from a night shift work. But we did see to it that we had a nice family dinner. I cooked spaghetti, fried chicken and of course the cake.

Of course, what is a birthday without a birthday cake… In the past, Klarion had the most special birthday cakes…

Van Gogh’s Birthday Cake

Months have passed but I’m still high on this cake we made on my daughter’s birthday. We came up with this idea as my daughter loves Art and she wanted to have a Van Gogh’s birthday cake this year. So basically, she did the whole thing and we’re so amazed. I remembered telling her to just follow the instructions on my Perfect Chocolate Cake recipe and she’ll be fine.

After making the cakes and cooling them off, we rolled out a white fondant to cover an 8 inch round, 4 inch high cake. We prepared the edible food coloring that we need for the Art which is basically just black, blue and a bit of yellow. My daughter painted the cake on her own and turned out beautiful. We’re so proud of her on this one!!!

We didn’t eat the cake on her special day at home as she’d love to bring it and share it to her choir friends. We just sang “Happy Birthday” song to her and she blew her candle on her birthday night. It was all good. The feedback we got from her friends saying that it’s the most moist and yummy chocolate cake they had was just satisfying. They were so surprised to learn that my daughter personally baked and painted her own cake. Well done!!!

Semi Naked Vanilla Meringue Cake

I made this semi-naked vanilla meringue cake for my little sister’s birthday. It is made with vanilla cake and Buttercream Frosting topped with my Easy No-Fail Meringue.

Her birthday has passed but I still want to make it for her. I never had the chance to make it a few weeks ago because of certain reasons like my clingy little boy who doesn’t want me to move around the house and just wants to snuggle up with me in the couch while watching his favourite videos. Second is the lack of ingredients, I was too stuffed to make a list and go shopping for ingredients.

Okay, so let’s talk about this delicious, lovely looking cake. This semi-naked vanilla meringue cake was actually a combination of recipe, design and ideas. The vanilla cake recipe is originally from Chelsea. The meringue recipe is my original recipe which could be found on this blog: Easy No-Fail Meringue. The semi-naked cake idea was inspired by some of the good cake makers who posted on Pinterest but still my original masterpiece. I am proud of that!

Semi-Naked Vanilla Meringue Cake


1 cup White Sugar
125g butter
2 eggs
2 teaspoons vanilla essence
1 1/2 cups plain flour
1 3/4 teaspoons baking powder
1/2 cup milk

How to Make Semi-Naked Vanilla Meringue Cake?


1. Preheat oven to 180 degrees C.
2. Grease and flour 4-inch cake pans.
3. In a stand mixer, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla essence.
4. Combine flour and baking powder, add to the creamed mixture and mix well.
5. Finally, stir in the milk until mixture is smooth.
6. Pour the batter into the prepared pans.
7. Bake in preheated oven for 30 minutes. The cake is done when it springs back to the touch.

MnM’s Cake

I made this MnM’s Cake to donate for my daughter’s school fair this Saturday. I hope this cake would be gone in seconds so that we could help more people in need.
My daughter’s teacher gave each student a cake box for them to put the cake in. At first, I was thinking if I would do a fondant cake, but I realized MnM’s cake would be more appealing for everyone. 
I have made a similar cake before but instead of MnM’s, it had Maltesers’. Oooooh! So yummy and sweet!!!

Yellow Butter Cake


1 cup unsalted butter, room temperature
1 1/2 cups all purpose flour
1 1/2 cups cake flour (see cake flour substitute, if not available)
1 tbsp baking powder
1/2 tsp salt
1 3/4 cups sugar
4 large eggs
2 tsp pure vanilla extract
1 1/4 cups milk
1. Preheat oven to 350F or 176C. Butter two 8 inch round cake pans; line the bottoms with baking paper. Butter baking paper and dust with flour. 
2. In a bowl, sift together flours, baking powder and salt, set aside.
3. In the bowl of an electric mixer with a paddle attachment, cream the butter and sugar until light and fluffy for 3 -4 minutes. Beat in eggs, one at a time, then beat in vanilla. Turn the speed to low then add the flour mixture in three parts, alternating with the milk. Beat until combined after each addition.
4. Divide batter between the prepared pans. Bake the cake for 30-35 minutes or until the cakes are golden brown. To test if the cake is done, insert a toothpick on the center of the cake, if it comes clean, then your cake is ready. 
5. Transfer pans to a wire rack to cool for 20 mins. Invert cakes onto the rack, peel off the baking paper.
6. Reinvert cakes and let them cool completely.

Rio Movie Themed Fondant Cake

Rio Movie Themed Fondant Cake is my very first official cake paid by a customer. It’s an 8-inch round chocolate cake with chocolate buttercream icing covered with fondant. The coloured fondant is store-bought. I chose to use store-bought fondant because I want this cake to be as colourful as seen in the picture above. 
My customer wanted Rio as it was her son’s current favorite movie. I was so excited to make this for her but I was stressed in a way that I might not be able to make the birds as beautiful as it should be. I asked help from my hubby. We tried it in playdough first. Thanks to my little daughter who lent us her playdough for this project. We thought to put Rio toys instead that comes with your Mcdonald’s happy meal. But unfortunately, we haven’t had any of those. We stopped buying happy meal since my first daughter is not little any more and we haven’t introduce happy meal to our little one or else she’ll ask for it like her big sister did when she was her age. 
So, we can’t think of other ways but to make Macaw birds out of fondant and so we did, I mean my hubby did hehe! He tried to make it as close as to the original Macaw birds; Blue and Jewel and we came up with those birds seen on the picture. 
Rio movie themed fondant cake would be my memorable cake ever as it was my very first project that made my cake more popular and had given me extra cash.

Barbie Doll Fondant Cake

I made a Barbie Doll Fondant Cake for my 9 year old daughter. Originally, she wanted a Candyland Themed Fondant Cake inspired by Katy Perry’s California Girls music video. It didn’t happen, unfortunately, as I didn’t have enough time to make it. We were about to leave the town for a long vacation in Ohakune, New Zealand.

We celebrated her birthday in the snow of Mt. Ruapehu. She enjoyed it even it was cloudy and gusty up there. Although, the weather didn’t cooperate, the birthday celebrant assured that she’s going to make her special day, her best day ever.

Most of all, we enjoyed her chocolate cake with chocolate buttercream icing covered with fondant cake.


Fondant Bra Cake

This is my homemade fondant bra cake that I made for my friend, Ruth. She had her birthday on July 6 but I was able to give her this bra cake on the 9th because of a busy schedule.

This fondant bra cake is made of perfect chocolate cake with buttercream icing and covered with white fondant for the skin and red fondant for the bra. I also used 3 silver edible decor that I put on the center of the bra. This is a simple strapless bra that I made proudly.

I was supposed to do this on my birthday but I just thought of making 2 tier cake for a change because I haven’t tried doing 2 tier.

I’m so glad that Ruth appreciated this fondant bra cake that I made especially for her and oh, in return she gave me a special shirt from edaboc.
