Garlic Ginger Honey Baked Chicken

Yes, yes, yes!

This garlic ginger honey baked chicken is always a winner at dinner!!! Woohoo! I’ve been making this recipe for several times already and it never failed me. The chicken always turn out juicy, tender and moist. I love the sweet and salty combination of this recipe. Soy sauce and honey is a match made in heaven! I could eat a dozen of drumsticks in one go.

I usually make this when I’m lazy haha, yes, you got me… I was a bit lazy last night because of the  bed weather. It’s nearly summer here in New Zealand but it felt like Winter has never left. In fact, in the southern part of the country, it’s still snowing and it’s super cold.

It is also a time saver and an inexpensive dish! One pack of chicken drumstick in Pak n Save costs only $5.00 in some days, so we stock our freezer with it. Defrost it when I don’t feel like staying in the kitchen for a long time. Marinade – Put it in the Oven – Leave it for 20-30 minutes – Turn the chicken on the other side to cook – Come back for another 20-30 minutes and there you have a delicious Asian chicken dish!

My family loves this garlic ginger honey baked chicken with white steamed rice and coleslaw. Potato salad would be a nice side dish too. Have a go and let me know how it turn out to you!


1 kg. chicken drumsticks
1 piece ginger, (2 inch), peeled and julienned
6 cloves garlic, peeled and minced
4 Tbsp soy sauce
2  Tbsp oyster sauce
2 Tbsp honey
1 Tbsp sesame oil
white pepper and salt to taste
Pinch of Chinese five-spice powder, optional


1. Always rinse the chicken and pat dry with paper towels before adding the garlic and ginger. Gently rub them on the chicken to infuse the flavor. In a bowl, add the rest of the ingredients to the chicken and mix well. Make sure the chicken drumsticks are coated nicely with all the ingredients.

3. Marinate for at least 30 minutes. For best result, leave in the fridge for 2 hours or overnight.

3. Pre-heat the oven to 375F or 190C. Arrange the chicken on a baking sheet lined with baking paper and bake for 25-30 minutes each side in the middle of the oven, or until the surface turn golden brown and the inside is cooked and tender. Leave it in the oven for a bit more for slightly charred outcome.

4. Serve and enjoy with family and friends!


Vanilla Glazed Baked Donuts


Today, I made Vanilla Glazed Baked Donuts because why not? I want to try other donut recipes that doesn’t need to be fried as baked is a healthier alternative.

I’m getting so obsessed in making donuts since the silicone moulds came. I think I’m going to spam all your feed with different kinds of donut flavors and designs. I’m so excited.

I am not a donut kind of person although I crave for it sometimes especially when partnered with coffee. Dunkin Donuts? Yes please! Mister Donuts? Yes please! That’s all there were when I was still in my homeland but now there’s J.Co, Krispy Kreme, and I’m pretty sure there are lots more.

To be honest, I wanted to make these donuts since forever. What holds me back is the allergy I had these past days, my very clingy little boy (who by the way doesn’t want me to move around the house as he just wants to snuggle up with me while watching his favorite videos) and also the weather. The weather lately was unpredictable (oh well, that’s not a surprise in New Zealand). It was a good thing that I found time to grab all the ingredients that I need for this recipe. This recipe is originally from As Easy as Apple Pie. Here they are:

Vanilla Glazed Baked Donuts


1 cup all-purpose flour
1/3 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons unsalted butter melted
1 egg
100 ml milk
1 teaspoon vanilla extract

For the vanilla glaze:

1/2 cup icing sugar
1/2 teaspoon vanilla extract
1 small pinch salt
1 or 2 tablespoons milk
Optional: food colouring and sprinkles


1. Preheat the oven to 175 degrees C.
2. Spray a donut pan with nonstick cooking spray and set aside. I used silicone moulds so I didn’t need to spray cooking spray on them.
3. In a large bowl, whisk together the flour, sugar, baking powder and salt.
4. In a small bowl, whisk together egg, milk, butter and vanilla extract.
5. Add the wet ingredients to the dry ingredients and stir together until all the ingredients are well combined. Do not over-mix the batter.
6. Pour the batter into a piping bag and pipe it around the donut cavities filling it up half way or 3/4 full.
7. Place the pan in the oven and bake for 8 to 10 minutes.
8. Remove from the oven and allow to cool in the pan before inverting onto a wire rack to cool completely.
9. While the donuts cool, make the vanilla glaze.
10. In a medium bowl whisk together the powdered sugar, vanilla extract and salt.
11. Add 1 tablespoon of milk, and whisk to combine. If the glaze is too thick, add additional milk, 1/2 teaspoon at a time until the desired consistency is reached.
12. Add food coloring if you wish.
13. Once the donuts are completely cool, dip them into the vanilla glaze. Return to the wire rack and sprinkle with sprinkles. Allow the glaze to set for about 30 minutes before stacking or serving.
14. Enjoy these delicious vanilla glazed baked donuts!


Easy Baked Donuts


Yay! My Donut Silicone Mould came today and I’m so ecstatic to make Easy Baked Donuts with my little boy K3! I’ve ordered these Donut Silicone Moulds online and it took me a few weeks to receive it. It’s all good! I think the wait is worth it as it’s just a few bucks for these babies.

I’ve searched Google for Easy Baked Donuts as soon as I received these Donut Silicone Moulds. I found the Easy Baked Donuts recipe on YouTube by BakeLikeAPro. The recipe didn’t fail me as it’s really easy to make and healthier than fried donuts but it’s not something I would make again. I was not satisfied on its taste. To be honest, it doesn’t taste like donuts or even close to cake donuts although it turned out looking really good as I make galaxy donuts.

I posted it on my personal Facebook account and I guess they’re enticed by how they look. They didn’t know that the recipe is actually a failure. I will try making donuts again and practise on piping the donuts more evenly into the Donut Silicone Moulds, but next time it will be a different recipe.

I’m happy with my Donut Silicone Moulds that it worked very well in making the easy baked donuts.

Here is the recipe of the Easy Baked Donuts:


1 egg
6 tablespoon white sugar
1 tablespoon melted butter
6 tablespoon milk
1/4 teaspoon salt
1 tablespoon baking powder
1 cup flour


1. Beat the egg in a bowl.
2. Add the sugar and beat until well blended.
3. Now add the melted butter, milk and salt. Mix.
4. Slowly add sifted baking powder and flour to the mixture. Mix all the ingredients until combined.
5. Transfer the batter into a piping bag with a round tip.
6. Pipe the batter around the donut moulds.
7. Bake for preheated oven of 220 degree C for 7-9 minutes, depending on you oven.
8. Cool completely and ice whatever you prefer.

Roast Sage and Garlic Chicken


1 whole Chicken (about 2 kgs)

1 ½ tsp lemon pepper

22 fresh sage leaves, finely chopped

3 garlic cloves, pressed

6 Tbsp unsalted butter, softened

3 Tbsp chicken fat or olive oil

salt and black pepper to taste

8 sprigs parsley

1 medium onion, quartered

2 carrots, peeled and cut into 1 inch pieces

1 lemon, quartered


1. Preheat oven to 240C (475F).

2. In a bowl, combine butter, sage, lemon pepper and garlic.

3. Loosen skin of chicken on breasts and thighs using fingers and a small, sharp knife.

4. Spread butter mixture between skin and meat evenly.

5. Brush skin with chicken fat or olive oil. Season cavity with salt and pepper to taste.

6. Stuff with chicken with lemon, parsley, some carrots and onion.

7. Using a twine, tie two legs together.

8. On the center of roasting pan, add the other quartered onion and leftover carrots, then place chicken on top of the vegetables.

9. Roast for 20 minutes then reduce oven temperature to 200C (400F).

10. Continue roasting until thermometer reads 80C (170F), about 1 hour.

11. Transfer chicken in a dish where you plan to carve it. Let it rest for 10 minutes before carving.

12. Serve and enjoy Roast Garlic and Sage Chicken with family and friends!

Creamy Vegetable Bake

I used to eat this food when I was at the hospital to give birth to my second daughter. I love this food, it’s creamy and yet healthy. It’s one way of making vegetables look enticing for kids and taste yummylicious too!

It is a very light meal for a night without meat, or you can add smoked fish for extra protein and flavor.

500 g potatoes, cooked and diced
4 hard-boiled eggs, peeled and quartered
3 cups frozen vegetable mix (or you can add whatever fresh vegetables you like)
400 g can creamy herb and garlic pasta sauce

1. Preheat oven to 180C.
2. Place potatoes, eggs and frozen vegetables in a lasagne dish.
3. Pour over the pasta sauce and mix gently. Sprinkle with cheese.
4. Bake for 30 minutes or until heated through.
5. Serve as a light meal or leave out egg as a side dish.
