Brazo de Cups are a soft cotton meringue cups filled with rich sweet custard, sprinkled with icing sugar on top. It melts in your mouth, you don’t want to stop eating it.

The Braised Beef Stew or commonly known to Filipinos as Beef Pares are cubed tenderised beef cooked with different spices and served perfectly with garlic fried rice or noodles.

Colourful Mini Puto

Colourful Mini Puto is a steamed rice cakes, usually seen during celebrations in the Philippines and normally as a snack. But this recipe is not composed of rice cakes, rather I used all-purpose flour with butter, sugar and egg whites.

Sapin Sapin

Sapin-Sapin means “layered” and this Filipino dessert is distinguishable from others because of its colourful layers of glutinous rice topped with toasted desiccated coconuts. It is made out of glutinous rice flour, coconut milk, sugar, flavouring and food colouring. The usual colours of sapin-sapin are purple, yellow or orange and white. 

Chicken Mami

This is what we called Chicken Mami, a popular Filipino noodle dish made from fresh egg noodles and homemade chicken broth, topped with napa cabbage, carrots, fried garlic, hard boiled eggs and chopped spring onions. Chilli is optional.


Here is another great Filipino dish called “Laing” that is composed of dried Taro leaves and coconut milk. It is originally from the province of Bicol. I’m hoping that this dish will get an international credit in the future.
